SWEET MASALA GUVA

INGREDIENTS
  1. guva-3{not fully ripe}
  2. groundnuts_250gm
  3. jangerry-200gm{scrapped}
  4. red chillipowder-1 teasoopn.
  5. ommam seed-1 teaspoon
  6. salt-q.s.
  7. tamarind.-{small amount}
METHOD:
Cut guva into small pieces,heat 11/2 teaspoon gee in a pan,to this add omam,stir well until it becomes crsipy,then added grided groundnut&jangerry allow to become semisolid,then add chilli powder along this mix some tamarind {small amount}and mix well to this add guva &salt for taste. take down from the flame&serve this delicious dish hot.

SPECIAL RECIPIES.

BRIYANIS:

     This is one of the Persian dish.It is prepared by the steamed rice with meat or chicken,fish,prawns etc.with the fried masalas &the flavors and decorated with leaves,
FISH BIRIYANI:       cooking time:25mins.
Ingerediants:
1.fish-1kg
2.basmati rice-1kg
3.turmeric powder-1/2 teaspoon
4.chilli powder-2 teaspoon
5.big onion-200gm
6.green chilli-100gm
7. cashew-50gm
8.garlic-50gm
9.ginger-50gm
9.coriander leaf-200gm{chopped}
10.tomato-500gm {small piece}
11.cloves-3gm
12.cinnamon-3gm
13.cardamom-3gm
14.cashew-10gm
15.kismis-10gm
16.gee-400gm
17.salt-quantity sufficient.
18.oil-q.s.
METHOD:
Cut the fish into small pieces and mix with turmeric powder,chilli poweder&salt make it pasteto the fish and fry it in a pan.
Fry the onion,cashew,dried grapes separetly in a pan,also fry green chillies,cloves,cinnamon,cardomom{powdered},add garlic,ginger,fry it with onion&tomato,mix this with the fried fish.
        Boil the basmati rice with water add salt&lemon juice. In the pressure cooker add few gee,fried fish with the above masalas spread this with the half boiled rice,above this add the cashew,dried grapes,again spread the rice upon that,add this alternately,all the above pour some gee over that and cook it for 5 mins,reduce the flame,remove it and serve hotly.this can be decorated with fried onion,cashews&coriander leaves.
TIPS: boil the rice with lemon so that the rice wont stick each other.

INDIAN BIRIYANI

ingredients:        cooking time:25 mins
1.basmati rice-1kg
2.groundnut oil-250gm
3.dalda /gee-50gm
4.meat-1kg
5.green chilly-20
6.big onion-1/4kg
7.garlic-2
8.cloves-6
9.cinnamon-1/2pieces
10.ginger-1piece
11.coriander leaf-1/2cup chopped
12.coconut-1
13.tomato-4
14.curry powder-11/2 tablespoon
METHODS:
         Grind coconut &curry powder,fry the masalas with onion and grind it.Cut the onion &tomato into small pieces and heat the oil and mix the tomatoes &onion,to this add the fried masalas.
                  Cook the the meat with turmeric powder&salt for 10mins,add the masalas and allow it to boil,after 5mins,add rice&masalas in a vessel and allow to boil with water,reduce the flame,after 10 mins remove from the flame.serve it hotly.

PULAV

This is also similar to briyani,but the difference is little masalas&spices are added to this.there are varieties of pulavs like brinjal pulav,tomato pulav,mixed veg pulav etc.

BRINJAL PULAV:

Ingredients:
1.brinjal-4
2.rice-2cups
3.big onion-200gm
4.gee-400gm
5.ginger-1 teaspoon
6.garlic-1 teaspoon
7.cashew-10gm
8.garam masala-1 teaspoon
9.coriander leaf-1 table spoon
10.salt&water -q.s
METHODS:
     Heat the veg oil in a pan,take some chopped onion&mix it with pasted ginger&garlic with some garam masalas.put brinjal to this and fry it for few mins add little water to boil.
             soak the rice for few hrs and drain it and mix it with the above ingredients and fry it.pour some water to boil,reduce the flame mix it throughly and decorate with cashews and coriander leaves
and serve it hotly with some sweet chutney.

SWEET CHUTNEY:

INGREDIENTS:
1.BEETROOT-1 cup
2.fried dried grapes-1/4 cup
3.jaggery-1/2 teaspoon
4.chilly powder-1/2 teaspoon
5.tamarind-q.s
6.salt-q.s
METHODS:
    MIX THE ABOVE INGREDIENTS IN A MIXER AND SERVE THIS WITH THE PULAV OR BIRIYANIS.

MUSHROOM PULAV:
INGREDIENTS:
1.BASMATI RICE-1 CUP
2.GEE-2TABLESPOON
3.ONION-1 CUP
4.MUSHROOM-100GM
5.SALT-Q.S
6.WATER-2 CUPS.
METHODS:
          Soak the rice for few hrs and drain it,heat the gee with mushroom,onion,salt and fry this,don't allow this to come brown.
boil the rice with 2 cups of water after drain this and mix the above ingredients to this rice and serveit with hotly.

CHICKEN GRAVY:

INGREDIENTS:
1.CHICKEN-1KG
2.TOMATOES-3
3.ONION-1/2 CUP
4.CAPSICUM-1/2 CUP{CHOPPED}
5.CHILLY POWDER-2 TEASPOON
6.CORIANDER POWDER-11/2 TEASPOON
7.TURMERIC POWDER-1/2 TEASPOON.
8.Coriander LEAF-1/2 CUP{CHOPPED}
9.SALT-Q.S.
10.WATER-Q.S
METHODS:
HEAT SOME VEG OIL IN  A saucepan AND ADD ONION,TOMATOES ALLOW TO FRY ,UNTILL IT BECOMES BROWN.ADD CAPSICUM TO THIS,TAKE THE CHICKEN PIECES AND ALLOW TO BOIL TO THE ABOVE ADD WATER SUFFICIENTLY,ADD SALT TO THAT.MIX THESE WITH CHILLY ,CORIANDER,TURMERIC POWDER,MIX THIS THROUGHLY AND ALLOW IT TO BECOME THICK. ADD PASTED CASHEW TO THE ABOVE INGREDIENTS FOR TASTE,ADD SOME CORIANDER LEAF.AND SERVE HOT WITH BIRIYANI.
